History: the French Cuisine has been existing for 4 centuries. But at this period only the Rich could eat good products. The Renaissance has brought many new products from West Indies (Potato, Turkey…).Louis XIV (Roi Soleil) adored to eat good and much. In the Château of Versailles he used to eat 12 hour meal. It was the born of the Haute Cuisine. A good chef, Escoffier, was the author of the first recipe books known all over the world

At the 19th century the reference cuisine was the Cuisine Bourgeoise. The dish was very rich in taste and fet.

Since the 70's, young and talented cooker have imagined new dish, with less fet and more fresh ingredients. At its beginning this cuisine was criticized because the plates were not really full and the clients were still hungry after eating: it is the Nouvelle Cuisine.
